Roast Chicken with Lemon, Garlic and Thyme
The first thing I learned to cook, and still the thing I make when I want the house to smell like a Sunday. Take the bird out of the refrigerator a full hour before it goes in the oven. That hour is most of the recipe.

Ingredients
- 1 whole chicken, about 4 lb
- 2 lemons, one halved, one sliced
- 1 head garlic, halved crosswise
- 6 sprigs thyme
- 3 tbsp butter, softened
- 1½ tsp kosher salt
- Black pepper, freshly ground
Method
- 1Heat the oven to 425°F. Pat the chicken dry inside and out and season it all over with the salt and a generous grinding of pepper.
- 2Push the halved lemon, the garlic and four sprigs of thyme into the cavity. Rub the butter over the skin and tuck the lemon slices underneath.
- 3Roast for 1 hour 15 minutes, basting once at the halfway mark, until the juices at the thigh run clear.
